Ingredients:

1 package Zatarain's dirty rice mix
1 onion, chopped
1/2 green bell pepper, chopped
2 stalks celery, chopped
1/2 cup vegetable oil
2 chicken breasts
1/2 pound smoked sausage
1 (8 ounce) jar sliced mushrooms, drained

Directions:
  1. Cook the rice according to package directions. This is best done in a rice cooker, but a microwave is alright.

  2. Saute the onion, bell pepper and celery in cooking oil.

  3. Boil the chicken breasts and cut them into bite-size pieces.

  4. Parboil the sausage.

  5. Drain and chop finely or pulse in food processor.

  6. Combine all ingredients and adjust seasonings.

  7. Let sit for at least 1 hour.

  8. Warm in microwave, taking care not to stir too much.

  9. The flavor is best when the rice kernels are unbroken and not mushy.
