2 pounds alligator meat
1/4 cup vegetable oil
1 green bell pepper, chopped fine
2 onions, chop fine
1/2 cup celery, chop fine
1/4 cup shallots, chop fine
1/4 cup parsley, chop fine
1 bay leaf
1/4 teaspoon basil
Salt and pepper to taste
Directions:
Heat oil.
Saute onions until they are golden brown.
Saute bell pepper and celery until they are tender.
Add meat and seasonings and simmer 40 minutes.
Add shallots and parsley 5 minutes before serving.
