Description:
Roux is the base for many Cajun dishes. The most notable of these dishes is gumbo. Many stores sell premade rouxs in both wet and dry forms.

Ingredients:

Flour
Vegetable oil

Directions:
  1. In a large iron pot or skillet, heated over a low flame, add cooking oil.

  2. When oil is hot, add an equal amount of flour, slowly, and stir constantly, using a spatula.

  3. Cook until the roux is the color of milk chocolate.
