Cajun Sausage Roast

Ingredients:

1 lb smoked Cajun sausage
1 pork loin roast (3 lb)
1/2 cup water
2 tablespoons soy sauce
1 small green bell pepper, finely chopped
1 small onion, finely chopped
1/2 teaspoon Kitchen Bouquet
2-3 tablespoons cornstarch


Seasoning Mix:
Dried chives
Granulated garlic
Salt
Parsley flakes
Black Pepper
Directions:
  1. Make the seasoning mix: Combine chives, garlic, chives, parsley, salt and black pepper to make seasoning mix.

  2. Slice loin into smaller 6 inch long roasts. Cut a tunnel style hole through the center of the roast (left right) and insert sausage into hole. Cut two additional holes and put 1 tbs of seasoning mix into holes and push throughout to distribute evenly. Insert more sausage into these holes. Season ends of roasts with seasoning mixture.

  3. Place in roasting pan with bell pepper and onions. Place in 425F oven uncovered for 30 minutes.

  4. Cover pan and continue cooking until internal temperature reaches 160F-165F.

  5. Remove roast from pan. Dissolve cornstarch in water and add to pan to form gravy. Add soy sauce and Kitchen Bouquet and season to taste.

  6. Serve with gravy.
