6 lb chicken fryer
1 cup onion tops
2 onions, chopped
1/3 cup parsley
1/2 cup cooking oil
3/4 cup flour
1 tsp file gumbo
4 quart water
salt and pepper to taste
Directions:
Brown chicken in oil; remove and set aside.
Saute bell pepper, onions, and celery until tender. Add mushrooms, tomato sauce, 1/2 cup of water. Cover and simmer for 10 minutes
Add chicken and remaining water. Cover and cook 30 minutes.
Add parsley, onion tops and flour. Cover and simmer for an additional 45 minutes.
