Alligator Sauce Piquante2013-01-06
Tasty stew featuring alligator served over rice
- 3 pounds alligator meat
- 1/2 cup solid vegetable shortening (Crisco)
- 1 1/4 cups flour
- 1 cup water
- 1 large green bell pepper, chopped
- 3 large onions, chopped
- 8 ribs celery, chopped
- 1/2 cup scallions, chopped
- 1 can tomato paste (6 oz)
- 1 can tomato sauce (8 oz)
- 1 tablespoon cayenne pepper
- Splash of steak sauce
- Salt (optional)
- Rice, cooked
Cut alligator into small strips; Coat meat in steak sauce.
Heat some of the shortening in a large pot.
Add meat and brown.
Remove meat and set aside.
Add remaining shortening and flour mixing well.
Add onion, green pepper, celery and scallion.
Slowly saute until vegetables are tender.
Add tomato sauce and tomato paste mixing well.
Add water and pepper.
Cover and cook over medium heat for 30 minutes.
Add meat and stir.
Cook until meat is tender (about one hour).
Add salt to taste.
Serve over cooked rice.
