Beef Liver Creole2013-01-06
- 1 lb beef liver
- 1 green bell pepper, thinly sliced
- 1 1/4 cups onions, sliced
- 3 tablespoons butter
- 1/2 cup diced celery
- 1 1/2 cups canned tomatoes
- Cayenne pepper, to taste
- 1/2 teaspoon salt
Slice liver into thin slices and lightly coat in flour.
Add butter to skillet and melt.
Add liver to skillet and brown.
Add tomatoes, celery, onions, bell pepper, cayenne pepper and salt.
Cover and simmer for 20 minutes.
Remove meat then add flour to thicken gravy.
Cover the pan and simmer for about 20 minutes.
Add flour to thicken gravy.
Serve over rice.
