Black-Eyed Pea Gumbo

Ingredients

  • 4 cups black-eyed peas
  • 1/2 pound salt pork
  • 1 cup onions, chopped
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 clove garlic
  • 1/2 pound okra, cut up
  • 1 quart or 2 cans tomatoes
  • 2 cans Ro-Tel tomatoes
  • 1 pound popcorn shrimp
  • 3 tablespoons margarine
  • Salt and pepper to taste

Method

Step 1

Soak peas overnight.

Step 2

Add salt pork; start cooking.

Step 3

Saute onions, celery, bell pepper and garlic. Add to peas with shrimp.

Step 4

Add both the regular canned tomatoes and the Ro-Tel tomatoes and simmer until done.
