Cajun Corn Chowder

Ingredients

  • 1 Tbsp. oleo
  • 1/4 cup onions,chopped
  • 1/4 cup bell pepper,chopped
  • 2 cup water
  • 1 cup pork sausage
  • 2 cup whole kernel corn
  • 1/2 tsp salt
  • 2 cups potatoes, diced
  • 1/4 tsp black pepper
  • 1/2 bay leaf
  • 1 tbsp parsley flakes
  • 1 tbsp green onions
  • 1 1/2 cup milk
  • 3 tbsp flour
  • Tabasco (dash)

Method

Step 1

Melt oleo and saute onions, bell pepper.

Step 2

Brown sausage.

Step 3

Add water, bay leaf, potatoes, parsley, salt and pepper. Bring to a boil.

Step 4

Cover and simmer for about 20 minutes. Cook until potatoes are tender.

Step 5

Remove bay leaf.

Step 6

Make a paste of flour and 1/4 cup of milk. Add slowly by stirring in with other ingredients.

Step 7

Bring to a boil and cook five additional minutes.
