Cajun Flour Roux2013-01-06
Roux is the base for many Cajun dishes. The most notable of these dishes is gumbo. Many stores sell premade rouxs in both wet and dry forms.
- Vegetable oil
In a large iron pot or skillet, heated over a low flame, add cooking oil.
When oil is hot, add an equal amount of flour, slowly, and stir constantly, using a spatula.
Cook until the roux is the color of milk chocolate.
