Crab and Rice Casserole

Ingredients

  • 2 cups crab meat
  • 1/2 cup onions, chopped
  • 1 bell pepper, chopped
  • 4 sticks celery, chopped
  • 1/4 cup pimentos
  • 3 sprigs parsley
  • 2 small cloves of garlic
  • 1 stick butter
  • 4 pats butter
  • 1 can mushroom soup
  • 3 cup cooked rice
  • 1/2 cup water
  • bread crumbs
  • Cajun seasoning

Method

Step 1

Melt butter then saute onion, bell pepper and celery until wilted.

Step 2

Add soup, crab meat, pimentos and parsley then cook for 5 minutes

Step 3

Add water, rice, bread crumbs, and seasoning (to taste).

Step 4

Put entire mixture into casserole dish and sprinkle with additional bread crumbs and add pats of butter on top. Cover with foil and bake 30 minutes at 475F.

Step 5

Remove foil and cook for 5 additional minutes to brown.
