Crawfish Fettuccine

Ingredients
- 3 onions, chopped
- 3 ribs celery, chopped
- 2 bell peppers, chopped
- 4 tablespoons parsley, chopped
- 2 cloves garlic, minced
- 3 sticks margarine
- 1/4 cup flour
- 1 pint half and half
- 3 lbs. crawfish
- 1 lb. Velvetta cheese
- 1 tablespoon jalapeno
- 1 lb. fettuccine noodle
- Parmesan cheese
- salt and pepper
Method
Step 1
Saute onion, pepper, celery, and butter. Add flour, cover and cook on low 15 minutes, stir often. Add parsley and crawfish, cook 15 minutes stirring often. Add half and half and cook slowly with half of the Velvetta. Add salt and pepper, cook 30 minutes. Add cooked noodles, put in casserole, spray with Pam. Top with the parmesan cheese and the remaining Velvetta. Bake at 350 degrees for 15 minutes.
