Creole Shrimp Jambalaya2013-01-06
- 2 lb medium shrimp
- 1/2 lb sausage, cut into pieces
- 8 large onions, chopped
- 1/2 bell pepper, chopped
- 2 stalks celery, chopped
- 2 1/2 cup rice, uncooked
- 2 tsp vegetable oil
- Cajun seasoning (to taste)
Saute onions in oil until browned.
Add 1/2 cup of water, bell pepper, celery, shrimp, and sausage. Simmer 20-30 minutes adding water as necessary.
Add rice and 4 cups of water stirring well. Cover and simmer for one hour.
