Creole Tomato Pie

Ingredients

  • 4 large tomatoes
  • 1 lb cooked crispy bacon
  • 1 bunch chopped scallions
  • 16 oz assorted yellow shredded cheese
  • 1 cup sharp cheddar cheese
  • 16 oz shredded white cheese
  • 1 cup flour
  • 1/2 cup butter, softened
  • 1 tsp Italian seasoning

Method

Step 1

Peel and slice tomatoes

Step 2

Prepare crust by mixing cheddar cheese, butter and flour. Press into pie pan. Bake at 350F for 15 minutes or until flaky.

Step 3

Saute onions in bacon grease then add Italian seasoning.

Step 4

Place tomatoes, cheese, bacon and scallions in layers in the pie crust. The top layer should be tomatoes topped with scallions.

Step 5

Bake until cheese is melted.
