Downright Easy Jambalaya2013-01-06
- 1 package Zatarain's dirty rice mix
- 1 onion, chopped
- 1/2 green bell pepper, chopped
- 2 stalks celery, chopped
- 1/2 cup vegetable oil
- 2 chicken breasts
- 1/2 pound smoked sausage
- 1 (8 ounce) jar sliced mushrooms, drained
Cook the rice according to package directions. This is best done in a rice cooker, but a microwave is alright.
Saute the onion, bell pepper and celery in cooking oil.
Boil the chicken breasts and cut them into bite-size pieces.
Parboil the sausage.
Drain and chop finely or pulse in food processor.
Combine all ingredients and adjust seasonings.
Let sit for at least 1 hour.
Warm in microwave, taking care not to stir too much.
The flavor is best when the rice kernels are unbroken and not mushy.
