Fast Vegetable Beef Soup

I wasn’t feeling well one day and wanted to cook a version of my mom’s soup. Of course, I decided this when I was already hungry so I knew I had to speed things along. This is what I came up with. It tasted good and it helped me feel better!




  • 1/2 bag of frozen mixed vegetables
  • 1 can beef broth
  • 1 can tomato sauce
  • 1 lb stew beef cut into 1" cubes
  • 3 medium red potatoes cut into small wedges
  • 1 cup of shell noodles
  • red pepper and salt (to taste)
  • 12 oz water


Step 1

In a medium stockpot, boil potatoes in broth, tomato paste and water.

Step 2

To save time, season meat and cook on a grill such as a George Forman until medium well.

Step 3

When potatoes are almost soft, add mixed vegetables and beef.

Step 4

Can be served over rice.
