Fast Vegetable Beef Soup2015-08-18
|I wasn’t feeling well one day and wanted to cook a version of my mom’s soup. Of course, I decided this when I was already hungry so I knew I had to speed things along. This is what I came up with. It tasted good and it helped me feel better!|
- 1/2 bag of frozen mixed vegetables
- 1 can beef broth
- 1 can tomato sauce
- 1 lb stew beef cut into 1" cubes
- 3 medium red potatoes cut into small wedges
- 1 cup of shell noodles
- red pepper and salt (to taste)
- 12 oz water
In a medium stockpot, boil potatoes in broth, tomato paste and water.
To save time, season meat and cook on a grill such as a George Forman until medium well.
When potatoes are almost soft, add mixed vegetables and beef.
Can be served over rice.
