Hot Creole Cabbage2013-01-06
- 1 medium cabbage, chopped coarsely
- 1 large onion, chopped coarsely
- 1 large bell pepper, chopped coarsely
- 2 slices bacon
- 1 28 oz can whole tomatoes, chopped (keep juice)
- 1/3 cup vinegar
- 1/4 tsp black pepper
- 2 tsp salt
- Cayenne pepper, to taste
Cut bacon into smaller pieces and cook in a large pan.
Saute bell pepper and onion with bacon.
Stir in tomato juice and tomatoes.
Add cabbage, vinegar, black pepper, salt and cayenne pepper.
Cover and bring contents to a boil.
Reduce heat and simmer for 45 minutes.
