Okra Louisiana

Ingredients

  • 1 lb okra
  • 2 cups stewed tomatoes
  • 1/2 bell pepper, chopped
  • 1 large onion, sliced into rings
  • 4 tbsp vegetable oil
  • 1 tsp lemon juice
  • 1/4 cup flour
  • 1/2 cup cheese, grated
  • 1 tsp salt
  • black pepper, to taste

Method

Step 1

Cut okra into 2" long pieces.

Step 2

Warm two tablespoons oil in skillet and saute bell pepper and onion.

Step 3

Add tomatoes, lemon juice, salt and pepper and simmer for fifteen minutes.

Step 4

Heat the remaining oil in another skillet. Dredge okra with flour and add to oil. Cook until heated being careful not to brown.

Step 5

Lower heat and pour tomato mixture over okra.

Step 6

Add cheese then cover skillet and simmer for fifteen minutes.
