Red Beans and Sausage2013-01-06
- 1 lb smoked sausage
- 1 large onion, chopped
- 1 lb. kidney beans
- 8 cups water
- 1 tbsp cooking oil
Add oil to a large pot and saute onion until transparent.
Add water and beans and cook on low for one hour.
Remove three tablespoons of beans, mash them, then return to pot. Continue cooking until sauce is think and creamy.
Add sausage and cook for 15 minutes.
Season to taste with Cajun seasoning.
