Seafood Gumbo

Ingredients

  • 2 lbs shrimp
  • 1 can crabmeat
  • 1/2 pint oysters
  • several whole crabs, cleaned
  • 3 tbsp vegetable oil
  • 2 tbsp vegetable oil
  • 1/2 cup parsley, finely chopped
  • 3 tbsp flour
  • 1/2 cup green onions
  • 2 large onions, chopped
  • 3 cups okra, chopped
  • 1 can whole tomatoes
  • 2 quarts water

Method

Step 1

Make roux from oil and flour. Be careful to stir constantly. Roux should be dark brown when finished.

Step 2

Add shrimp to roux and cook for a several minutes. Set aside.

Step 3

Add oil to okra, onions, tomatoes and garlic. Add water, salt and pepper once okra has cooked down.

Step 4

Add shrimp and roux to vegetable mixture and simmer for 30 minutes.

Step 5

Add crabmeat, oysters and whole crabs and simmer until crabs are cooked.

Step 6

Add green onions and parsley then simmer another 20 minutes.

Step 7

Serve over rice.
