Shrimp and Ham Jambalaya

Ingredients

  • 2 lb. shrimp
  • 1 cup diced cooked ham
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 stalk celery, chopped
  • 3 shallots, chopped
  • 3 cloves garlic, chopped
  • 3 sprigs parsley, chopped
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1 can tomato sauce (8 oz.)
  • 2 cup water
  • 1/4 cup shortening
  • 1 1/2 cup raw rice
  • 1 tsp salt
  • 3 - 5 drops hot pepper sauce

Method

Step 1

Add onions, ham and shrimp to shortening and saute over medium heat.

Step 2

Add bell pepper and celery. Saute until limp.

Step 3

Add the rest of the ingredients and stir well.

Step 4

Cover and simmer over low heat for about 30 minutes. Do not stir during cooking.
