Smothered Alligator

Ingredients

  • 2 pounds alligator meat
  • 1/4 cup vegetable oil
  • 1 green bell pepper, chopped fine
  • 2 onions, chop fine
  • 1/2 cup celery, chop fine
  • 1/4 cup shallots, chop fine
  • 1/4 cup parsley, chop fine
  • 1 bay leaf
  • 1/4 teaspoon basil
  • Salt and pepper to taste

Method

Step 1

Heat oil.

Step 2

Saute onions until they are golden brown.

Step 3

Saute bell pepper and celery until they are tender.

Step 4

Add meat and seasonings and simmer 40 minutes.

Step 5

Add shallots and parsley 5 minutes before serving.
