Super Duper Jambalaya2013-01-06
- 1 lb shrimp
- 2 onions, chopped
- 1/2 cup celery, chopped
- 1/2 cup onion top, chopped1/2 cup parsley, chopped
- 4 cloves garlic, chopped
- 1/2 cup canned tomatoes
- 1/2 cup Rotel tomatoes
- 3 cups water
- 2 cup uncooked rice
- 2 tbsp vegetable oil
Heat oil and saute onion, celery and garlic until onions are limp.
Add 1/2 cup of water, tomatoes and seasoning and cook for about 20 minutes.
Add remaining water, shrimp, and rice. Bring to a boil for two minutes. Cover and reduce heat to low. Cook for 45 minutes.
Stir in onion tops and parsley. Leave on warm for 10 additional minutes.
