Sweet and Sour Coon

Ingredients

  • 1 coon
  • 3/4 cup ketchup
  • 2 medium onions, chopped
  • 4 beef bouillon cubes
  • 1 tsp dry mustard
  • 4 cup water
  • 1 tsp Allspice seasoning
  • 6 gingersnaps
  • 1 tsp salt
  • 3/4 cup vinegar
  • 1 tsp pepper
  • 3/4 cup brown sugar

Method

Step 1

Cut coon in serving size pieces.

Step 2

Parboil and then remove all fat by scraping. Place coon pieces in roasting pan.

Step 3

Add onions and sprinkle with Allspice, dry mustard, salt and pepper.

Step 4

In separate pan, heat ketchup, bouillon cubes, water, gingersnaps, vinegar and brown sugar to boiling. Pour over meat in pan.

Step 5

Roast at 350F for about 3 hours or until done.
